PRODUCTS - NORTHERN SPY
 
  We have only one specimen of these trees so we guard its health jealously. The Northern Spy is very slow coming into bearing some people say it can take 8 or 9 years to bear significant fruit. We always make pies with these and add them to our personal pressings of cider.

Adam's Apples says "The flesh is yellow, juicy, and coarse. The bite is a little tender but still crisp.A hint of acid tartness gives this apple a bit of life and character on the tongue. Still Northern Spy is mostly a mild cidery apple with a few higher notes. Hint of spice, pear, and cherry, very agreeable."
